Here are the ingredients that you’ll need:
½ kilo of mutton pieces, bite or medium sized
3 to 4 tablespoons of green papaya, grated
200 grams of yoghurt
1 teaspoon coriander
1 teaspoon turmeric powder
½ teaspoon cumin powder
1 teaspoon garam masala powder
1/3 teaspoon red chili powder
1 pod black cardamom
4 pods green cardamom
2 to 3 cloves
½ inch, 2 to 3 pieces cinnamon sticks
3 bay leaves
2 pcs dry red chili
½ teaspoon cumin seeds
1 green chili, crushed
2 teaspoons garlic paste
2 teaspoons ginger paste
Salt
½ teaspoons sugar
2 medium sized tomatoes, pureed
2 onions, finely chopped
Mustard or white oil
500 ml hot water
Coriander leaves
1 teaspoon ghee or clarified butter
Let’s cook!
First, marinate the mutton with ginger garlic paste, yoghurt, green chili, grated papaya and all the other powdered spices (with the exemption of garam masala). Leave for approximately 50 minutes.
Pour the oil in a pan. Once the oil is hot enough, caramelize the sugar. This will give a rich brown color to your gravy. Put the bay leaves, cumin seeds as well as the red chilies. Pour the chopped onions as soon as the seeds crackle and fry them all together until it turns golden brown. Put the meat in while leaving the liquid in the marinade, cook for approximately 7 to 10 minutes in a medium flame. Cover the lid to simmer.
Cook for about 25 minutes in a low flame. Stir occasionally. Once the oil starts to separate from the dish, fry the mutton pieces. As soon as they are brown, pour the tomato puree and the liquid marinade and simmer in a low to medium flame for about 15 minutes. Add some salt to taste.
Add some hot water and put the entire mixture into a pressure cooker. Leave for about 10 minutes until the meat is tender. Add the ghee and garam masala powder and leave again for about 5 minutes.
